Dinner Tonight

Ok, I probally picked a bad week to start this blog because we are having left-overs pretty much all week, but thats what happens when you cook food you like, eating the "re-runs" is not so bad. The left overs for tonight was Green Chili Easy Chicken Enchiladas. Its a pretty easy recipe:

For 2 People, Re-runs x2

6 Med Tortillas
Cooking Spray
1 Chicken Brest (cooked and shredded/cubed)
1/4 C Onion and/or Green Bell Pepper Minced
1 Small Can of Salsa Verde
1 Small Can of Green Chilis (minced)
2 T of Sour Cream
2 oz of reduced fat mexican cheese mix

Step 1:
Spray Med Sized Glass Dish
Larger than 8x8 smaller than 9x13

Step 2:
Mix Chicken and Onion together

Step 3:
In a blender mix
Salsa Verde, Green Chilis, and Sour Cream

Step 4:
Split 2oz of cheese

Step 4:
Asseble Enchies
Tortillia
Cheese (sprinkle)
Chicken & Onion Mix
Roll

Place in baking dish that has been coated with cooking spray.
Repeat

Once you get all 6 assembled,
top with Salsa Chili Sauce

Cook for 30 Min at 350 deg
after 30 min add remainig 1oz of cheese
and cook until cheese is melted.

Serving is one Enchie
goes great with beans!
